Welcome Home Dinner

This meal was made because he was out working for two days. I made a peppered beef tenderloin with baby carrots with brown sugar, bread, salad with homemade salad dressing and cucumbers and tomatoes. Everything came out perfect. It was a great evening.

Rise and Shine Pizza

Breakfast pizza, but we had it for dinner. It was amazing. I again cooked it on the grill so the house would not get too hot. I had breakfast pizza at Barton Creek Resort in Ausitn, TX a few weekends ago and I thought to myself I had to make this at home. Barton Creek has the most amazing breakfast and every day there is something different. I looked on Pintrest and found a recipe on Kraft Foods.

Koryo Kalbi Korean BBQ

I have to say I was so happy to ride across Fort Worth into Dallas to eat Korean BBQ. IT WAS AMAZING! If you never had Korean BBQ, it is grilled meat with a ton of side dishes. The waiter takes thin sliced meat and grills it for you. There was four of us so we all tried each other’s meats. So yummy.

We had: Beef Bulgogi, Duck, Marbled Rib-eye, Marinated Short Ribs, and Thin Pork Belly.

You also get rice, soup, lettuce, salad, and tons and tons of side dishes.

Paella

Paella Combine 1 cup uncooked Spanish rice mix, 1 1/4 cups  chicken broth, 6 peeled large shrimp, 2 skinless chicken thighs, 2 ounces sliced  dried chorizo, 1/4 cup each garlic-stuffed olives and onion,  and 1/2 teaspoon smoked paprika in a disposable pie pan. Drizzle with olive oil;  sprinkle with pepper. Seal the pan in foil. Grill over medium-high heat, 30  minutes.

This came out amazing!!!!!

Eggplant and Goat Cheese Sandwich

I found this recipe on Pintrest and it was easy and came out so yummy. I changed a few ingredients to the original recipe so here it is revamped:

Eggplant and Goat-Cheese Sandwiches with Tomato Rosemary Sauce
(Food & Wine)
Serves 4
INGREDIENTS
1 tablespoon olive oil 1 small onion, chopped 3 cups fresh or canned crushed tomatoes in thick puree (one 28-ounce can) 1 teaspoon fresh rosemary 1- 1/4 teaspoons salt 1 teaspoon sugar 1/2 teaspoon fresh-ground black pepper 1 cup dry bread crumbs  1/2 cup grated Parmesan,  1 eggplant, peeled and cut 8 slices in all 4 eggs, beaten to mix Cooking oil, for frying 1/2 pound mild goat cheese, cut into 8 rounds
DIRECTIONS     1.    In a medium saucepan, heat the olive oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the tomatoes, rosemary, 3/4 teaspoon of the salt, and the sugar and simmer, stirring occasionally, for 25 minutes. Stir in 1/4 teaspoon of the pepper.     2.    Meanwhile, heat the oven to 350°. In a medium bowl, combine the bread crumbs, Parmesan, and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper.     3.    Dip each slice of eggplant in the eggs and then in the bread-crumb mixture, coating well. In a large frying pan, heat about half an inch of cooking oil over moderate heat until very hot. Fry the eggplant in the hot oil, in batches, turning once, until golden and cooked through, 1 to 2 minutes per side. Drain on paper towels.     4.    Arrange half of the eggplant slices in a single layer on a baking sheet. Put a slice of goat cheese on top of each and then top with the remaining eggplant slices. Bake until the cheese melts, about 10 minutes. Put the sauce on plates and top with the eggplant.

Vietnamese Fried Egg

I had all intentions of making my Rise and Shine Pizza but he beat me to cooking breakfast. He loves making Asian dishes no matter breakfast, lunch, dinner, or a snack. I was really skeptical with this as breakfast. He fried an egg, cooked some rice (he flavored the rice with fresh herbs and seasonings), and placed on a lettuce leaf. He said it was not the correct lettuce but it will work. We added some soy sauce, hot sauce, and sweet chili sauce. It was really good and will have to have him make this again soon. It was a nice treat for him to cook for me, very thoughtful.

Week Two

The first week went better than I expected. I signed myself up for emeals to make it easy for myself but decided to gather some new ideas and use some from the grocery/menu list from emeals. (Check out emeals….make it easy and great idea). Last week,  I did not make the Pasta with sausage because I added the sausage to my parmesan garlic fries. I went online and looked up some of my favorite site: Rachael Ray, Food Network, Kraft Foods, and Pintrest.  When I go tot a grocery store I get 3 types of foods: fresh, pre-made, and frozen. Life happens and thinking of what to make is too easy when you just pop open the freezer. Our guilty favorite is the PF Chang’s frozen meals (wishful thinking we had one close to use, but Fort Worth is 5 hours from here). Our second favorite frozen food is pizza…but it is summer time and it gets over 100 degrees outside and the oven does not need make the AC work harder. I went a little over board at the grocery store and got 2 weeks worth of food….so Week Two is going to stretch 2 weeks. One of the dishes I could not find the main ingredient: lobster, so Mexican BLT Lobster Rolls, I can’t make here in West Texas. The recipe can be found on Rachael Ray.

French Bread Puffs

These are soooo good. Recipe from The Pioneer Woman. And very easy to make. These could be really good for mini cupcake pans.
